Grilled asparagus with mustard and dill sauce

Background
This grilled asparagus with mustard and dill sauce is a delicate dish that’s perfect for dinner parties and special occasions - you can serve is as an aperitif or as a starter. Alternatively, serve it with boiled/poached eggs and maybe some smoked salmon for a celebratory brunch (on Mother’s day, Easter, Valentine’s day, Anniversaries etc). For a vegan version use sugar instead of honey.
Ingredients
- 1 bunch of asparagus
- 1 Tbsp olive oil
- For the mustard sauce:
- 2 Tbsp German or Polish (mild) mustard
- 1 Tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 3 Tbsp olive oil
- 2 tsp honey
- 1 Tbsp chopped dill
- Freshly ground pepper
Instructions
- First make the mustard sauce. Mix the mustard, vinegar and honey, then add gradually and slowly the oil, while whisking it until you get a mayonnaise-like consistency. Stir in the dill and set aside.
- Cut off the woody ends of the asparagus, then rub or brush them with the oil.
- Heat a griddle pan and grill them for about 5 minutes until tender and lightly charred.
- Transfer the asparagus to a plate and drizzle the sauce over them.
- Serve warm or at room temperature.
