Grilled bagel with mozzarella and sundried tomatoes

Background
This grilled bagel with mozzarella and sun-dried tomatoes is perfect for a lazy weekend brunch or quick midweek lunch. Itβs ready in just 5 minutes. You can use gluten-free or flavoured, spiced bagels, I particularly like the ones with caramelised onion.
Ingredients
- About 10-12 mini Mozzarella balls
- About 8 thin slices of sundried or sun blushed tomatoes from jar
- 1 tsp red pesto
- 1 tsp Italian herb mixture or marjoram
- Basil or parsley leaves
Instructions
- Preheat the oven or grill.
- Put the mozzarella balls, sun-dried tomatoes and herbs in a bowl. Add the pesto and mix well.
- Cut the bagel in half, then put the halves on a baking sheet, cut-side facing upwards.
- Arrange the mozzarella and tomato pieces on the two bagel halves, then grill or bake for about 5 minutes until the bagel looks golden and the cheese has started to melt.
- Scatter some herbs on top and serve warm, with salad on the side.
