Grilled courgette with feta and tomato
Background
This grilled courgette with feta and tomato is a super easy dish, perfect for summer garden parties, barbecues, laid-back lunches, picnics and so on. You can serve as a main salad with pita bread or as a side dish (with grilled lamb or chicken). The cooking needs a griddle plate which you can place on the cooker or a BBQ.
Ingredients
- 2 Tbsp olive oil
- 2 courgette
- 1 pinch of dried oregano
- 2 garlic cloves
- ½ lemon
- 50g feta
- Mint leaves
- Handful of baby tomatoes
Instructions
- Slice the courgette thickly and garlic thinly.
- Brush the courgette with olive oil and season with salt and pepper. Add a pinch of oregano.
- Heat a griddle pan and cook the courgette pieces for 2-3 mins on each side until lightly charred.
- Add the garlic for the last 2 minutes of cooking.
- Transfer the courgette and garlic to a plate and arrange the tomatoes between the pieces.
- Squeeze some lemon juice over them.
- Crumble the feta on top, then drizzle with a drop of olive oil and garnish with mint leaves.
- Serve warm or at room temperature.
