Grilled fennel and courgette salad

Background
This grilled fennel and courgette salad with bacon and goat’s cheese is an all-year round delight! In the Summer it’s ideal for BBQ/garden parties; during the winter months it’s perfect for a laid-back weekend lunch or as starter at a dinner party.
Ingredients
- 2 medium courgettes
- 2 tbsp olive oil
- 1 tsp fennel seed
- 100g pancetta or lardons
- 1 fennel bulb
- 100g soft goat cheese
- Half lemon, juiced
- Extra olive oil
Instructions
- Using a vegetable peeler, slice the courgettes into long strips. Put them in a mixing bowl, add the oil and fennel seeds, then marinate for 10 minutes.
- Cut or shred the fennel into very thin slices.
- Fry the bacon in a pan until crispy then drain on paper kitchen towels.
- Grill the courgette slices on the grill, BBQ or in griddle pan for a couple of minutes on each side until soft and charred.
- In a large salad bowl, mix the grilled courgette, bacon pieces, fennel strips, then drizzle with lemon juice (and extra olive oil if needed), then crumble the goat cheese on top.
- Serve at room temperature.
