Grilled halloumi, courgette and red pepper burger

Background
Halloumi is very useful for vegetarian burgers as its texture is meaty and chewy. These days you can buy it shaped as burger patties! Β This grilled halloumi, courgette and red pepper burger is perfect for Summer barbecues, garden parties, lazy lunches -Β during the cold months you can use a griddle pan.
Ingredients
- 1 red bell pepper
- 2 thick slices or patties of halloumi
- 1 courgette
- 1 garlic, minced,
- 1 Tbsp olive oil
- 1 Tbsp red pesto
- Lettuce leaves, condiments (optional)
- Buns or rolls (gluten-free if needed)
Instructions
- Cut the red pepper in half and remove the seeds.
- Using a vegetable peeler, cut the courgette into thins strips.
- Mix the oil with garlic.
- Brush the pepper and courgette slice s with the garlic oil.
- Heat a griddle pan or your BBQ and cook the veggies until lightly charred.
- Add the halloumi too, cook for a coup0le of minutes on both sides.
- Meanwhile toast the bread or buns and spread some pesto on the bottom half.
- When the cheese slices are charred and the veggies are soft, remove them from the grill and layer them on top of the pesto.
- Add some condiments of your choice and serve immediately.
