Grilled pineapple with honey & lime

Background
If you want a quick and easy dessert forΒ a BBQ do try this grilled pineapple with honey & lime drizzle! It's incredibly easy to make and very nice with a scoop of coconut or citrus ice-cream!
Ingredients
- 3-4 Tbsp Clear Honey
- Zest of 1 lime
- 1 medium pineapple
- 1β2 tsp ground black pepper
Instructions
- Cut the top end off the pineapple with a sharp knife, then cut off the peel by slicing it off from the top to bottom.
- Cut the pineapple flesh into about 10 x3 cm rectangle shapes. Thread each pineapple piece onto pre-soaked bamboo skewers, then put them on a medium hot barbecue, griddle pan or grill. Cook the skewers for 4-5 minutes on each side until caramelised and starting to char.
- Meanwhile, make the drizzle, by mixing the honey, lime zest and pepper together in a small bowl.
- When the skewers are charred, put them on a plate and brush each side generously with the honey syrup, then scatter some more lime zest on top.
- Squeeze some lime juice on top and serve warm.
