Grilled prawns with feta & tomato relish

Background
These grilled prawns are perfect nibbles at a party or appetizers when you're having friends over for a barbecue. You can easily make it into a prawn salad too - just toss the relish together with the grilled prawns!
Ingredients
- 20 large prawns (shelled)
- 4 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 2 cloves garlic (crushed)
- 1 tsp chopped thyme
- For the relish:
- 100g feta cheese
- 2 medium tomatoes
- Black pepper
- 1 Tbsp olive oil
- 2 tsp lemon juice
- 1 Tbsp chopped mint leaves
Instructions
- Mix the olive oil with the lemon juice, garlic and thyme. Pour this over the prawns, chill and marinate for 30 minutes.
- Soak wooden skewers in water for about 30 minutes (if used).
- Heat a barbecue or grill or a griddle pan. Thread the prawns carefully onto the skewers.
- Cook on both sides for 2-3 minutes - until the prawns change colour to pink.
- Seed the tomatoes, then chop finely. Mix with the oil, lemon juice, pepper and mint, then crumble the feta on top..
- Serve the prawns with the feta & tomato relish scattered over them.
Tips
For parties, create individual skewers by threading only one prawn per skewer. In this case use small wooden, thick skewers!© 2026 Copyright CookTogether
