Grilled turkey breast with spiced onion salsa

Background
Grilled turkey breast can be very dry and rubbery. In this recipe the meat is tenderized in a lovely spiced sauce, then grilled with salsa around it - so the result is a tasty and succulent turkey breast. It's best to marinate it for a while, but the preparation and cooking only take 15 minutes. Perfect for a lazy weekend supper.
Ingredients
- 2 large turkey breast fillets (about 500g)
- 1 small red onion
- 1 clove garlic
- ½ tsp ground cinnamon
- 1 tsp ground ginger
- ¼ tsp ground cloves
- 2 Tbsp white wine vinegar
- ½ tsp unrefined sugar
- 2 Tbsp olive oil
- salt and pepper
Instructions
- Chop the onion and garlic into tiny pieces.
- Put the turkey breasts on a chopping board, cover with clingfilm or greaseproof paper then beat out into one cm thickness.
- In a large dish, mix all ingredients with the onion and garlic, then coat the meat well with this mixture. Leave the meat in this marinade for 1-2 hours.
- Heat your grill, barbecue or griddle pan. Shake off the onion bits, season the turkey breasts with salt and cook them for 3-5 minutes on each side. If you use a griddle pan, add the marinade to the pan for the last 5 minutes to make a sauce. If you use a grill or barbecue, then fry this mixture separately in a pan.
- Serve warm with the spiced onion salsa over it.
