Guinness and orange brownies
Background
I made these Guinness and orange brownies once for St Patrickβs Day - they were so delicious that I make them regularly. This time I used wheat-free Guinness, gluten-free flour and dairy-free spread - so it ticks most allergy-boxes (it has no nuts either) - but you can follow the recipe using normal wheat flour, butter and proper Guinness!
Ingredients
- 1 cup Guinness stout (can be wheat-free)
- 1 cup gluten-free (or normal) flour
- 1 tsp salt
- 100g dark chocolate
- 100g unsalted butter/dairy-free spread
- 1 cup cane sugar
- 3 medium eggs
- 1 tsp vanilla extract
- zest of 1 orange
- 3 tbs orange juice
Instructions
- Preheat the oven to 180°C.
- Grease and line an approx. 22x22cm baking tin with parchment paper.
- Heat the Guinness in a saucepan on the stove and reduce it by half. Let it cool.
- Meanwhile put the chocolate into a thick glass bowl then place on the top of simmering water. When itβs melted add the butter or spread and stir until melted. Let it cool.
- Sieve the flour and salt into a bowl.
- Combine sugar, eggs, orange zest and vanilla extract in a large bowl. Add the orange juice and Guinness. Stir in the melted chocolate mixture. Gently fold in the flour.
- Tip the batter into the baking tin. Bake for 30-35 minutes. Itβs ready when a skewer/toothpick inserted into the centre comes out clean.
- Cool completely, then cut it into squares. Dust with icing sugar if you like.
