Halloumi, grape and cucumber salad

Background
This halloumi, grape and cucumber salad is very easy to make - perfect for picnics, trips, parties or for your lunch-box. It's also nice for a quick and light lunch or brunch, served with pita.
Ingredients
- 1 package of halloumi cheese (about 250g)
- 200g red grapes
- 2 Tbsp almond flakes
- 1 handful mint leaves, chopped
- 1 cucumber
- 1 tsp olive oil
- Dressing:
- 2 Tbsp lemon juice
- 4 Tbsp olive oil
- 2 tsp honey
Instructions
- Wash the grapes, cut hem in half.
- Cut the ends of the cucumber, cut it in half lengthwise, then scrape out the seeds. Chop the flesh into 2cm cubes. Add the mint.
- Put the grapes and cucumber pieces in a serving dish.
- Dry-fry the almond flakes in a frying pan, put them aside.
- Drain and cube the cheese.
- Heat the oil in a frying pan and cook the cheese on each side until golden.
- In a large bowl toss the grapes , cucumber and cheese cubes. Add the chopped mint.
- Mix the dressing and pour it over the salad. Just before serving, scatter the almond flakes on top and garnish with a few mint leaves.
