Halloumi summer vegetables & spiced dressing

Background
This is a lovely. easy recipe for the summer! Ready in just ten minutes - the halloumi is served with summer vegetables and a sumac spiced dressing, giving the salad a special flavour. It can be a starter or a main course for a light lunch (served with pita).
Ingredients
- 300g asparagus
- 200g green beans
- 200g radishes
- 3 tomatoes
- ½ cucumber
- 50g watercress
- A few sprigs of mint
- 200g halloumi
- 2 Tbsp olive oil
- Grated zest of ½ lemon
- 1 tsp sumac
Instructions
- Blanch the green beans and asparagus in boiling water for 2-3 minutes and then rinse with cold water and drain.
- Cut the cucumber in half lengthwise, scrape the seeds out, then slice into crescent-shaped pieces.
- Cut the tomatoes into wedges.
- Slice the radishes.
- In a serving bowl, mix the vegetables and watercress. Add the mint leaves.
- Cut the halloumi into 1 cm thick slices, brush with oil, then grill, barbecue or griddle them until slightly charred.
- Put the cheese slices on top of the salad.
- Mix the oil with the lemon juice and the sumac and drizzle over the salad.
