Ingredients
- 1 shallot
- 5 spring onions (reserve the green tops to garnish)
- 2 garlic cloves, finely sliced
- 100 ml chicken stock
- 200g green peas (frozen or fresh)
- 100g green beans, chopped
- 1 Tbsp white wine
- 1 cup of roast ham, chopped
- mint leaves, parmesan to serve (optional)
- 200g pasta (durum or gluten-free)
Instructions
- Cook the pasta according to the instructions on the packaging.
- Meanwhile: finely chop the shallot and spring onions.
- Heat about 1 Tbsp of olive oil in a pan. Add the shallot and spring onion slices. Gently sauté for 3 minutes then add the garlic. Cook for 1 more minute then add the wine. Let it bubble for a couple of minutes then add the chicken stock and bring to the boil.
- Add the green beans and peas. Reduce to a simmer and cook for 5 minutes or until the beans are cooked through. Add the ham to warm through then toss with the pasta.
