Harissa roasted leg of lamb
Background
I think my absolute favourite meal of the week is Sunday lunch, more precisely a nice & easy Sunday roast. I love chicken, lamb, duck, game or beef, as long as the oven does the job for me! This super easy Harissa roasted leg of lamb is cooked slowly, so ideal for lazy family meals at the weekendΒ or for laid-back dinner parties! Serve it with couscous or roasted veggies and a crispy salad!
Ingredients
- Half leg of lamb
- 1 Tbsp of Harissa paste
- 1 teaspoon tomato purΓ©e
- Β½ tsp ground cumin
- Β½ tsp ground coriander
- One garlic bulb
- One lemon
- Salt and pepper
- Small glass of white wine
- Freshly chopped parsley or coriander to serve
Instructions
- Mix the Harissa & tomato purΓ©e with the spices, then rub the lamb with the mixture. You can marinate it for a couple of hours, even overnight - or just rest until the oven is up to temperature.
- Turn the oven on, set the temperature to 180Β°C.
- Cut the garlic bulb in half, the lemon into 4 slices. Lay these in a roasting tin. Put the lamb on top, season with salt& pepper.
- Roast in the oven for 20 minutes, then take the tin out. Lower the temperature of the oven to 150Β°C.
- Pour the wine in the tin, then cover the dish with foil.
- Put the tin back in the oven and bake for approx. 90 minutes, depending on how well cooked you like your lamb( do a skewer test).
- Rest the lamb on a plate for 10 minutes (wrap it with foil and tea towel to keep warm) while you prepare the side dishes to serve.
- Drain the lambβs cooking jus into a small jug (or make gravy if preferred)
- Carve the lamb and serve with side dishes. Pour over the jus/gravy and scatter some fresh herbs on the top.
