Healthy carrot muffins

Background
Theses carrot muffins are not only gluten-free, but they are healthy too, so you can enjoy them without guilt!Β They can also be dairy-free if you use vegetable-based margarine, oaty cream and oaty milk.
Ingredients
- 100g carrots
- 100g (brown) rice flour
- 100g buckwheat flour
- 100 ml yogurt (or oaty cream)
- 50 ml milk (or oaty milk)
- 1 egg
- 1 Tbsp honey (runny) or agave syrup
- 50g of margarine or butter (melted )
- 1 tsp baking soda
- 1 tsp baking powder
Instructions
- Preheat oven to 190Β°C.
- Grate the carrots and mix with the egg, yogurt, milk, honey and butter/oil.
- In a large bowl, mix the dry ingredients , then pour in the carrot mixture. Mix well.
- Spoon the mixture into a greased & lined muffin tin or silicon muffin cases.
- Bake for 20 minutes until risen and browned.
- Transfer the muffins to a wire rack. Cool.
