Healthy gluten-free banana bread
Background
For a weekend lazy breakfast or afternoon tea a slice of nice, wholesome banana bread is most satisfying. This healthy gluten free banana bread is not vegan - but itβs gluten-free, dairy-free and almost totally sugar-free (actually, you can leave out the sugar, if the bananas are really ripe). Enjoy with your morning coffee or afternoon tea! Or take it with you to a picnic or party.
Ingredients
- 2 ripe bananas
- 1 tsp vanilla paste
- Β½ cup oat milk
- 1 cup gluten-free oats
- 2 Tbsp of vegetable oil
- 1 cup self-raising gluten-free flour
- 1 tsp baking powder
- 1/tsp cinnamon powder
- 2 Tbsp coconut sugar or Stevia
- Β½ cup sultanas or raisons
- Β½ cup chopped walnuts (optional)
Instructions
- Mash the bananas with a fork, then add the vanilla paste, oat milk, oil and oats. Set aside for 10 minutes, then add the flour, baking powder, cinnamon and sugar. Combine well, then fold in the walnuts and raisons.
- Preheat the oven to 160Β°C. Line a loaf tin with parchment paper or paper basket.
- Transfer the batter into the tin, spreading it out evenly.
- Bake the cake in the middle of the oven for approx. 60 minutes until golden and an inserted skewer comes out clean.
- Let it cool in the tin for 5 minutes, then transfer it to a wire rack to cool completely.
