Healthy mango, passion fruit and coconut pot

Background
This mango, passion fruit and coconut pot is perfect for dieters, the health-conscious or those with gluten-intolerance. It takes just 5 minutes to make and can be served for breakfast or as dessert. You can supplement it with some crushed ginger biscuits (put most of it this in the bottom of the pots, add the mixed yogurt then scatter a little crumble on the top).
Ingredients
- 1 ripe mango
- 150g essential Greek natural yogurt
- 1 Tbsp desiccated coconut
- 1 passion fruit, halved
Instructions
- Whizz the mango in a small food processor until you get a thick purΓ©e. Whisk it with the yogurt until light and fluffy. Gently stir in the coconut.
- Chill until ready to serve.
- Spoon into two bowls or glasses and spoon the passion fruit seeds and pulp an top.
