Herb and brie omelette

Background
Omelette is ideal meal for breakfast, brunch or lunch as it can be made in just a few minutes - and also itβs healthy and filling. Serve this herb and brie omelette with a green salad and/or with crusty bread.
Ingredients
- 3 eggs
- 1 Tbsp chopped fresh basil leaves
- 1 Tbsp fresh parsley leaves
- 1 Tbsp chopped chives
- 1 Tbsp milk
- 3 pinches of salt
- 1 pinch of ground pepper
- 1 long slice of brie cheese
- 1 Tbsp olive oil
Instructions
- Combine the eggs, milk, herbs, salt & pepper in a mixing bowl. Whisk well until light and fluffy.
- Heat the oil in a non-stick frying pan over medium heat. When the oil is hot, pour in egg mixture into skillet and let it spread out evenly. Cook until the egg is almost set. Place the cheese slice in the middle (it should almost reach the edges, if doesn't, use two slices of cheese).
- Fold the sides of the omelette over to cover the cheese. Cover the pan and cook for another minute or so, until the cheese is melted. You can turn the wrap over and cook for another minute if you like.
- Serve immediately.
