Background
It's so easy to make your own falafels which are much more healthy than the ready-made ones bought in the shops! These herby falafel balls are full of green herbs and spices that make them particularlyΒ zingy and tasty. Serve them in toasted pita or with other type of flatbread, some salad and a yoghurt dressing. I like serving it with yoghurty cucumber salad.
Ingredients
- Β½ Tbsp olive oil
- 1 small red onion
- 2 cloves garlic, pressed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tin of chickpeas (400 ml)
- 1 tsp baking powder
- 5 tsp chickpea flour (or plain flour)
- zest of 1 lemon
- 1 small handful of parsley leaves
- 1 small handful of coriander leaves
- 1 Tbsp chopped mint leaves
- Oil to fry
Instructions
- Heat the oil in a frying pan. Finely chop the onion then soften in the oil for 2-3 minutes. Add the garlic and the spices and cook for another 5 minutes on low heat, until tender.
- Drain the chickpeas, add to the onion together with 1 Tbsp of water, then cook for 2-3 minutes.
- Transfer it to a blender. Add the baking powder and flour then blend for a few seconds. Add the herbs, lemon zest, salt and pepper, and blend it to a rough textured paste.
- Form 8 balls between your palms and put them on a plate to rest.
- Fry the falafel balls in hot oil until golden brown all over.
- Serve them with a salad and pita bread.
Tips
You can cook them in the oven too - just spray them with oil.Categories
