Background
This herby tomato salad is fantastically easy and really tasty. It's perfect for summer barbecues, parties, picnics. You can also use it in burgers and sandwiches (in this case slice the tomatoes into rings, not wedges). I've used parsley, chives and mint -Β but most fresh herbs are fineΒ and try to have at least 2-3 different ones, depending on your main course.
Ingredients
- 500g ripe tomatoes on the vine
- 3 Tbsp of mixed fresh herbs ( parsley, chives, basil, oregano, mint etc)
- 1 small red onion
- 2 Tbsp olive oil
- 2 Tbsp white wine vinegar
- 1 tsp clear honey
Instructions
- Cut the tomatoes into wedges. Finely chop two, three different fresh herbs. Finely chop the onion. Put them in a serving bowl. Season with salt and pepper.
- Whisk together the dressing and drizzle it over the salad.
- Chill until needed.
