Honey and mustard glazed chicken bake
Background
If you’re after seasonal and tasty party food during for the winter festivities, try this honey and mustard glazed chicken bake! The first part (boiling the chicken in spiced broth) can be done in advance, then the final bake with glaze only takes 20 minutes, which you can do just before or during the party! Alternatively, this dish is ideal for a midweek comforting family supper, served with mashed potatoes and a seasonal salad.
Ingredients
- 8-10 drumsticks &/or thighs
- 2 star anise
- 2 cloves of garlic
- 1 small onion
- 1 large carrot
- 2 bay leaves
- For the glaze:
- 2 Tbsp honey
- 2 Tbsp mustard
- 2 Tbsp olive oil
Instructions
- Clean the carrots and slice them into 1 cm thick rounds.
- Peel the onion, cut it in half, then peel the garlic cloves.
- Put the chicken, carrot slices, onion, garlic, bay leaf and star anise in a pan of water, season with salt &pepper, then bring to the boil. Remove the foam, then gently simmer for 25 minutes.
- Meanwhile, turn the oven on and set it to 190°C. Mix the honey with mustard and olive oil.
- Remove the chicken and carrot pieces to a plate and let them cool for 5 minutes.
- Transfer the chicken (skin-side facing down) and carrot pieces to a baking dish, then drizzle them with 2 Tbsps of the cooking stock.
- Using a silicon brush, coat the chicken with honey-mustard mixture, then put the dish in the oven for 10 minutes. Turn the chicken over and brush them again with the remaining glaze. Return the dish to the oven for about 10-15 minutes and bake until golden.
