Indian chicken with spinach

Background
This recipe has many variations. This one is particularly tasty and healthy. It's ideal for a family meal during the week, served with steamedΒ rice and roti.
Ingredients
- 1 medium chicken cut into 8 pieces
- 400g spinach (approx)
- 2 onions, chopped
- 2 green chillies, chopped
- 2 tsp ginger-garlic paste
- 1 tsp turmeric
- 2 tomatoes
- Garam masala spice-mix:
- 1 inch cinnamon
- 2 cardamom
- 3 cloves
- 1 bayleaf
- Salt as required
- 1 tsp garam masala powder
- 1 Tbsp oil
Instructions
- Blanch the spinach in hot water, drain then grind it into a smooth paste. Put it aside.
- Heat the oil in a deep vessel and add in the garam masala spice mix.
- Add the chopped onions and fry till brown.
- Add the green chillies, ginger garlic paste and turmeric and fry for few minutes.
- Add the tomatoes and fry until they are cooked.
- Add the chicken pieces and salt. Cook it for 15/20 minutes or until it's cooked through
- Mix in the spinach paste.
- Sprinkle the garam masala powder.
- Serve it hot.
