Jackfruit and green pea burger

Background
This vegan jackfruit and green pea burger is a zesty version, ideal on Spring and Summer days. If you donβt like oats, you can use fine polenta or rice flour for binding - alternatively make some flax-eggs. Serve it with your favourite condiments and toppings, in buns or flatbread of your choice.
Ingredients
- 1 tin jackfruits
- 3 sundried tomatoes
- 2 cloves of garlic
- 1 tsp tomato purΓ©e
- 1 cup green peas, defrosted
- 2 salad onions
- 2 Tbsp dill
- 1 lemon, zested
- Β½ cup oatmeal
- Buns, salad, condiments of your choice
Instructions
- Drain the jackfruit and put it into a food processor. Add the garlic, sundried tomatoes, dill, spring onions and tomato purΓ©e. Season with salt and pepper.
- Whiz for a few seconds, then add the peas, dill and lemon zest. Whiz again, until you get a coarse mixture.
- Spoon the mixture into a mixing bowl and add enough oatmeal to have a malleable mixture. Set aside for 10-30 minutes.
- Meanwhile, prepare your condiments, salads, toppings and buns for the burgers.
- When youβre ready to cook the patties, form about 6 or 8 equal sized balls from the mixture, then flatten these between your palms.
- Put the patties onto a lined baking sheet and bake in a hot oven for 15 to 20 minutes until golden, or fry them in a pan over medium heat for five minutes or so, until golden.
- Assemble the burgers with your chosen buns,toppings and condiments.
