Background
This is a really interesting and healthy version of coleslaw. Ideal for parties and barbecues.
Ingredients
- 400g red cabbage
- 100g bean sprouts
- 1 tbsp wasabi paste
- 1 medium carrot
- 1 Tbsp vegetable oil
- 3 Tbsp Japanese rice vinegar
- 1 lime (unwaxed)
- 1 handful coriander leaves (cilantro), chopped
Instructions
- Wash the cabbage, cut in half and remove the stalk. Shred or thinly slice the cabbage.
- Coarsely grate the carrot.
- Make the wasabi paste using wasabi powder & water.
- Grate the zest of lime then squeeze out the juice. Mix both with the wasabi paste, oil and vinegar.
- In a large bowl toss the carrot, cabbage, bean sprout. Add the dressing, season to taste, toss well. Chill if you have time.
- Add the coriander just before serving.
