Background
Chicken nuggets and fried chicken are popular all over the world, but every cuisine has its own special version. The Japanese take is called Karaage, which is actually an adaptation of the Chinese crispy fried chicken. You can make this dish at home very easily - perfect for a snack, appetizer or party nibbles - and this recipe is gluten-free.
Ingredients
- 2 chicken breast fillets
- 3 Tbsp soy sauce (Japanese)
- 1 Tbsp sake
- 1 Tbsp grated ginger
- 1 clove garlic, minced (optional)
- 3 Tbsp potato or corn starch (corn flour )
- Peanut or vegetable oil
- lemon wedge for serving
Instructions
- Slice the chicken lengthwise, then chop into bite-sized pieces.
- Mix the soy sauce, sake, garlic and ginger then toss with the chicken pieces, making sure they're all well covered.
- Leave to marinate for a minimum of 15 minutes, longer if you have time. Soak up the liquid with paper towel, then they won't sputter in the oil.
- Put the chicken pieces in a plastic bag, add the corn-starch and shake the bag well until the chicken pieces are evenly (but not thickly) coated.
- Heat plenty of oil in a wok or a deep pan and fry the chicken until light brown. Drain them on paper towels.
- Serve with the lemon wedges, wasabi mayonnaise or another Japanese-style dip.
Tips
- This recipe is made with chicken breast but you may prefer chicken thigh which is more succulent and juicy.
- Karaage should not have thick batter and it should not be greasy!
