Kerala chicken curry

Background
There are different ways to cook chicken curry and the Kerala style to cook it is my personal favourite. Kerala dishes require fresh ingredients and are very tasty.
Ingredients
- Marination ingredients:
- 1 tsp Chilli powder
- 2 tsp Coriander powder
- ½ tsp Turmeric
- Salt as required
- Cooking ingredients:
- 500g Chicken, cut into medium pieces
- 2 Onions, chopped
- ½ tsp Fennel seeds
- 2 Green chillies, chopped
- 3 tsp Ginger garlic paste
- 1 Tomato, chopped
- ½ tsp Red chilli powder
- ½ tsp Pepper powder
- ½ tsp Turmeric
- 2 tsp Corinader powder
- 1 tsp Garam masala powder
- A sprig of curry leaves
- 1 Tbsp Oil
- Salt as required
Instructions
- Mix all the ingredients for marination in little water to form a paste. Add the chicken pieces to it and mix well and marinate for 30 minutes.
- Heat oil in a deep bottomed vessel and add chopped onions and curry leaves. Fry until the onions are brown.
- Add the fennel seeds and green chillies and cook for 2 minutes.
- Add ginger garlic paste and tomatoes and cook until the tomatoes are soft.
- Add chilli powder, coriander powder, turmeric, pepper powder, garam masala, salt and cook for 3 minutes.
- Add chicken and cook until it is soft and tender.
- Serve hot.
