Kiwi and almond oat waffles

Background
These kiwi and almond oat waffles are more healthy than usual as they are sugar-free and have a high fibre content. The ground almond provides oil naturally Β so you donβt need to add extra oil to the batter. I served mine with caramelized kiwis, but feel free to use your favourite toppings!
Ingredients
- 2 cups oats
- Β½ tsp baking powder.
- 2 eggs
- 1 cup oat or almond milk
- 3 Tbsp ground almond
- 3 kiwis
- Honey or maple syrup
Instructions
- Peel and roughly chop a kiwi.
- Put the chopped kiwi in blender with the oats, baking powder, eggs, almond milk, ground almond and baking powder. Pulse until you get a thick but pourable mixture. Add more milk if the mixture is too thick.
- Heat your waffle maker.
- Spoon some batter into the waffle maker, spreading it out evenly. Close the top and cook for 3-5 minutes (depending on your machine). When the waffle is golden, move to a plate and make more waffles using up the batter. You should get about 4 waffles, depending on your machine.
- Meanwhile, peel and slice the other kiwis. Brush them with honey or maple syrup.
- Heat a non-stick frying pan and caramelize them for a couple of minutes.
- Serve the waffles warm with the caramelised kiwis.
