Korean-Style Pork Ribs
Background
These Korean-style pork ribs are tender, sticky and packed with bold, sweet-spicy flavour. Inspired by classic Korean ingredients like gochujang and sesame oil, they’re perfect for Lunar New Year celebrations, family get-togethers or relaxed summer BBQ parties.
The ribs are gently simmered first with warming aromatics, making them incredibly tender. They’re then coated in a rich Korean-style glaze and quickly grilled or roasted until caramelised and slightly charred. Because they can be pre-cooked and marinated ahead of time, the final cooking takes just 10–15 minutes - ideal for entertaining.
Serve with steamed rice and simple stir-fried vegetables for a balanced, satisfying meal.
Ingredients
- For the ribs:
- 750g pork ribs
- 1 star anise
- 1 garlic clove
- 1 onion, halved
- 1 piece fresh ginger (about 3–4cm), sliced
- 1 bay leaf
- 1 small piece of cinnamon (optional)
- For the glaze:
- 1 tsp garlic powder
- ½ tsp ground ginger
- 1 Tbsp sesame oil
- 2 Tbsp gochujang paste
- 1 Tbsp muscovado sugar
- 2 Tbsp light soy sauce
- 2 Tbsp rice wine (such as Shaoxing)
- 1 Tbsp sesame seeds
Instructions
- Place the ribs in a large saucepan along with the star anise, garlic, onion, ginger, bay leaf and cinnamon (if using). Add enough water to fully cover the ribs.
- Bring to the boil, then reduce to a gentle simmer. Cover and cook for 35–45 minutes, until the ribs are tender but not falling apart.
- Drain the ribs and allow them to cool slightly. Transfer them to a large mixing bowl.
- In a separate bowl, mix together all the glaze ingredients except the sesame seeds. Pour the glaze over the ribs and turn them well so each piece is evenly coated.
- Cover and marinate for at least 1 hour, or up to 12 hours in the refrigerator for deeper flavour.
- When ready to cook, preheat the oven to 180°C or prepare a grill set to medium heat.
- Arrange the ribs on a lined baking tray in a single layer. Roast for about 15 minutes (or grill for about 10 minutes), turning once or twice, until caramelised and slightly charred at the edges. Keep an eye on them, as the sugar in the glaze can cause them to burn quickly.
- Sprinkle with sesame seeds before serving.
- Serve hot with steamed rice and stir-fried greens.
