Lamb and Vegetable Tray Bake

Background
Thisย Lamb and Vegetable Tray Bake is perfect for a simple yet satisfying lazy Sunday lunch! Its really quick and easy to prepare - then just leave the oven to do the rest while you go off for a brisk walk or whatever else takes your fancy!
Ingredients
- ยฝ Leg of lamb (about 800g)
- 4 cloves garlic
- several sprigs fresh rosemary
- 2 Tbsp rapeseed oil
- salt & pepper
- 3 medium potatoes
- 2 medium sweet potatoes
- 2 medium carrots
- 1 red onion
- 125 ml red wine
Instructions
- Preheat the oven to 190ยฐC
- Peel the garlic and cut into thin slivers. Make about ten deep cuts into the flesh all over the lamb then push a sliver of garlic into each together with a sprig of rosemary.
- Put the joint into a medium sized roasting tray, pour the oil all over it and season.
- Just scrub the vegetables, then halve them and place around the joint. Turn them in the oil and scatter some more seasoning over them.
- Pour over the wine. Put into the oven for about an hour.
- Serve with the cooking jus poured over and with green vegetables of your choice.
Tips
Other root vegetables (parsnip, swede etc) work well too but may need peeling.© 2025 Copyright CookTogether
