Background
In Hungary we have a very popular dish called Lecsó which is made from sautéed onion, pepper & tomato - it's quite similar to Ratatouille. Sometimes we add bacon, paprika sausage and/or egg to the recipe which makes it into a complete meal - perfect for a family supper! In my family we like it as a side-dish, particularly with mains of grilled sausage and steak. This time I decided on Lecso with lentils (simply adding a tin) to make it even more wholesome and the dinner more filling for the kids.
Ingredients
- 1 small red onion
- 1 green bell pepper
- 1 clove of garlic
- 1 tsp paprika powder
- 3 ripe tomatoes or 1 handful of cherry tomatoes
- 1 can of cooked lentils
- Juice of 1 lemon
- 2 Tbsp chopped parsley
- Cider vinegar (optional)
Instructions
- Thinly slice the onion, garlic, pepper and roughly chop the tomatoes.
- Heat some oil in a large frying pan and gently sauté the pepper, onion and garlic ( under a lid). When they are tender ( not soft) add the tomatoes and cook for another 5-8 minutes until the tomatoes have softened. Add the paprika, and stir for 30 seconds.
- Drain the lentils and add to the pan together with the lemon juice. Season generously with ground pepper and some salt to your taste. Warm through, then fold in the chopped parsley.
- Taste and adjust the seasoning (see tip).
Tips
To give a little edge, I normally add a drop of cider vinegar to it just before serving.Categories
