Leek and cheese omelette

Background
This leek and cheese omelette is super easy to make - on the table within 10 minutes. Try to use nutty hard cheese such as Gruyere, Emmental or matured Cheddar. Serve it with a crispy salad.
Ingredients
- 1 leek
- 1 tsp dried oregano or fresh thyme
- 4 large eggs
- 50g cheese, grated
Instructions
- Thinly slice the leek.
- Heat a spoonful of oil in frying pan, and sautΓ© the leek for 5 minutes. Take half the mixture out onto a plate.
- Lightly whisk two eggs in a small bowl with the herbs. Pour this into the pan, allowing to spread out evenly.
- When the surface has almost set, scatter half the cheese on top.
- When it starts melting, fold the omelette in half and cook for another minute or so, then slide it to a plate.
- Repeat with the other eggs and the remaining fried leek.
