Lemon and cottage cheese muffins
Background
These lemon and cottage cheese muffins are really easy to make, yummy and protein-rich. They are perfect for breakfast, afternoon tea, picnics and snacking during the day. For special occasions serve them with lemon icing or lemon cream-cheese frosting. You can bake these muffins in an Air fryer too, set to bake at 180C for about 15-20 minutes.
Ingredients
- 200g self-raising flour
- 1 pinch salt
- 1 tsp baking powder
- 200g cottage cheese
- 150g melted butter
- 150g sugar
- 2 tsp vanilla essence
- 1 lemon, zested and juiced
- 50 ml milk (approx.)
- 2 eggs
- ½ cup sultanas (optional)
Instructions
- Preheat the oven to 180°C.
- Sift the flour into a mixing bowl, then stir in the salt and baking powder.
- Spoon the cottage cheese into a mixing bowl, then add the melted butter, sugar, vanilla, eggs, lemon zest & juice. Combine well, then gradually stir in the flour mixture.
- Fold in the sultanas, if used.
- Spoon the mixture into a muffin tin, lined with paper cups, or into individual silicon cases.
- Bake the muffins for 20-25 minutes.
- Serve them with lemon icing, cream cheese frosting or just dusted powdered sugar.
