Lemon broad beans with wild rocket

Background
If you need a quick and easy side dish as part of with your roast dinner or summer BBQ feast try this recipe of lemon broad beans with wild rocket. Itโs ready in juts 10 minutes and goes well with chicken, lamb, pork and fish.
Ingredients
- 1 Tbsp olive oil
- 1 bunch spring onions
- 2 cloves of garlic
- 350g broad beans
- 1 cup vegetable or chicken stock
- Juice and grated zest of 1 large lemon
- 50g wild rocket
Instructions
- Slice the spring onion and chop garlic.
- Heat the oil in a shallow pan and add the spring onion and garlic pieces. Gently sautรฉ for a couple of minutes, then add the broad beans and stock.
- Bring to the boil and cook for 3/5 minutes.
- Add the lemon juice and cook for another minute.
- Season to taste, then fold in the rocket leaves and lemon zest.
- Serve warm.
