Background
These lemon muffins are really zesty and yummy - fantastic sweet treats for parties, picnics and special occasions - or just with a cup of tea or coffee. They're not only delicious but super-easy to make too. I'm sure you'll love them!
Ingredients
- 1 egg
- Β½ cup vegetable oil
- Β½ cup milk or almond milk
- Β½ cup sugar
- Grated zest & juice of 2 lemons
- 2 cups of self-raising flour
- 1 tsp salt
Instructions
- Preheat the oven to 200Β°C. Line a muffin tin with paper cases.
- Mix the oil, egg, milk and sugar in a medium sized bowl. When the sugar has melted, add the lemon zest and juice.
- In a large bowl, mix the flour and the salt, then pour in the wet mixture. Gently combine with a spatula - do not over-mix the batter, it should remain a little bit lumpy.
- Fill the muffin cases two-thirds full with the batter.
- Bake in the oven for 20-25 minutes until light brown.
- Transfer the muffins onto a wire rack to cool.
