Lemon & raisin ricotta fritters

Background
These easy lemon & raisin ricotta fritters are lovely for breakfast, brunch or an afternoon snack. They have no added sugar, so they're ideal for the health-conscious. On the other hand, if you have a sweet tooth, eat them with some jam or honey!
Ingredients
- 250g ricotta cheese
- 2 eggs, lightly beaten
- 50g sifted flour
- 20g soft butter
- 2 Tbsp raisins
- 3 Tbsp grated lemon zest
- vegetable oil for cooking
- Icing sugar, cinnamon or cocoa powder
Instructions
- Mix the ricotta with the flour, butter and eggs. Add the lemon zest and raisins - combine into a thick dough.
- If time allows, chill in the fridge for 30 minutes.
- Heat plenty of oil in a saucepan or wok. Drop spoonfuls of dough into the hot oil and fry them on each side till golden. Let them have random shapes!
- Drain the fritters on paper kitchen towels.
- Mix some icing sugar with cocoa powder or cinnamon and sift over the fritters before serving.
- Serve at room temperature.
Tips
You can easily turn this recipe gluten-free by using brown rice flour or chickpea flour.© 2024 Copyright CookTogether
