Lentil with bacon and chicken
Background
Lentil goes so well with bacon - in this recipe I've added some leftover roasted chicken meat and spinach.Β I ended up with a rather filling (and super quick) meal for supper! So this lentil with bacon and chicken dish is ideal for busy or lazy days! Serve it with wholesome, crusty bread or mashed potatoes and a green salad.
Ingredients
- 6 rashers of smoky streaky beacon
- 1 cup of shredded roasted/grilled chicken
- 2 cloves of garlic, minced
- 1 tin of green or brown lentils (400g)
- 2 handfuls of spinach or kale
- 1 Tbsp olive oil
- 1 Tbsp cider vinegar
- 1 tsp maple syrup or honey (optional)
Instructions
- Rinse and drain the lentils, set aside.
- Rinse and drain the spinach, set aside.
- Heat the oil in the frying pan and fry the bacon until crispy add the garlic and stir for 30 seconds or so, then add the lentils and the chicken pieces. Add the vinegar and cook for 3-5 minutes under cover to warm through.
- Season with plenty of pepper, then add the spinach, cover and cook for a couple of minutes, until the spinach has welted. Stir in the honey/maple syrup if used.
- Serve warm.
