Mackerel and sweet potatoes bake

Background
This mackerel and sweet potatoes bake is a healthy choice for a midweek meal - however it's not just healthy but hearty and incredibly easy to make. Use organic sweet potatoes as most of the nutrition is in or right under the skin, so there it's best not and no real need to peel them! Serve with a green salad.
Ingredients
- 4 mackerel fillets
- 3 large sweet potatoes (organic if pos)
- 2 tsp smoked paprika (approx)
- 1 yellow or red bell pepper
- 2 cloves of garlic, minced
- olive oil
- Salt and pepper
- fresh herb ( basil, parsley or coriander)
Instructions
- Preheat the oven to 190°C.
- Cut the sweet potatoes into finger sized sticks - leave the skin on!
- Cut the pepper into finger sized slices.
- Scatter these into a baking dish. Drizzle with some olive oil, add the garlic and, using your hands, toss the vegetables well. Season with salt and pepper.
- Rub half of the paprika into the fish, then some oil. Put aside.
- Put the baking tray into the oven for about 20-25 minutes. When the vegetables are soft and beginning to brown, take it out of the oven.
- Dust the vegetables with the remaining paprika, then place the fish on top of them. Season the fish with salt.
- Put the baking tray back into the oven and cook for another 10 minutes or so until the fish is golden and just cooked through.
- Serve warm, with some fresh herbs scattered over it.
Tips
If you like your food spicy, add add some chopped chilli pepper to the roasting vegetables or mix the paprika with some chilli powder!© 2026 Copyright CookTogether
