Background
Curd cheese spread (Körözött) is a very popular sandwich spread in Hungary. I also like mackerel paté so I've decided to combine the two and came up with this rather yummy recipe. I use it as a spread on a piece of toast for the kids to snack on or as a dip with bread-sticks, pita and raw veggie crudités. You can get curd cheese from Polish and other Eastern-European food stores.
Ingredients
- 2 slices of smoked mackerel
- 150g curd cheese
- 150g sour cream
- juice of half a lemon
- 1tsp frehly grated nutmeg
- couple of pinches of paprika (sweet or spicy)
Instructions
- Remove the skin of the fish, then put the flesh into a blender. Add the other ingredients, season to taste and pulse until you get a textured paste.
- Taste and adjust the seasoning to your liking.
- Chill until needed.
Tips
- If you have fresh herbs such as dill, chives, parsley, basil or coriander - add a handful to the blender before blending!
- The paté actually tastes better if you let it rest for a couple of hours in the fridge before serving!
