Background
Whether or not you’re on a diet this healthy Mango, kiwi and passion fruit fool is a lovely treat - particularly on a hot summer’s day! You can use vanilla yoghurt sold in the shops or just mix ½ tsp vanilla paste with a small pot of Greek yoghurt. Alternatively, make it with "coco yoghurt”, a wonderful dairy-free product, which goes really well with exotic fruits. If you have a sweet tooth, mix in some maple syrup, and you’ll be in heaven!
Ingredients
- ½ ripe mango
- 1 kiwi
- 1 small pot of vanilla or coconut yogurt
- 2 passion fruit
- Freshly squeezed lime juice
- Maple or Agave syrup (to taste)
Instructions
- Peel the mango and cut the flesh into small bits. Collect the juices.
- Peel the kiwi and slice it thinly.
- Divide the mango flesh into two glasses. Layer the kiwi on top. Pour over the mango juice and a squeeze of lime juice.
- Scoop out the seeds of one passion fruit and add to the yogurt. Mix well. Taste, and adjust the sweetness – you might want to add a spoonful of maple or agave syrup. Also, add a few drop of lime juice.
- Spoon the yogurt over the mango and kiwi. Scoop out the seeds of the other passion fruit and spoon over the top.
- Serve immediately or chill until needed.
