
Background
Homemade ice lollies are much more healthy and cheaper than anything you can buy in the shops. Also it’s so easy to make them! One of my favourite fruits to freeze is mango as it’s naturally sweet and, because of its texture, it doesn’t defrost too quickly. This mango and lime ice lolly has an edge to to it, so it’s more suitable for adults. You can make the similar ones for children using orange and adding more honey perhaps if they have a sweet tooth.
Ingredients
- 1 medium mango
- 1 lime, zested and juiced
- 3 Tbsp agave syrup (or honey)
Instructions
- Peel the mango then cut its flesh into bite sized chunks. Put the mango flesh into a blender, together with any of its juices.
- Zest and juice the lime, then add to the mango. Whiz until you get a smooth purée.
- Add agave syrup, taste and adjust - it should be quite sweet and sharp at the same time!
- Pour the purée into moulds, then add the sticks. Freeze for about 3-4 hours. Alternatively use instant ice lolly maker, following the manufacturer’s instructions.
- Enjoy!
