Background
This zesty, spicy mango and red pepper salsa goes really well with grilled fish! Also itβs great as a topping on nibbles and snacks - or as a party salad. It's ready in just 5 minutes. It's healthy and delicious too!
Ingredients
- 1 ripe mango
- Β½ red bell pepper
- 2 shallots or 3 spring onions or Β½ red onion
- Β½ red or jalapeno chilli
- 2 Tbsp chopped coriander
- Juice of 1 lime (or lemon)
- Salt and pepper
Instructions
- Peel the mango and dice the flesh.
- Finely chop the pepper.
- Finely chop the onion.
- De-seed and finely chop the chilli.
- Put all the chopped ingredients into a serving bowl. Add the coriander and lime juice. Season with salt and pepper. Taste and add more lime juice or herbs according to your liking.
- Cover and let the flavours infuse before serving.
