Background
Mango rice is made with grated raw mango and rice. This is a popular dish in southern India and is usually made during ugadi festival.
Ingredients
- 1 cup raw mango (grated)
- 2 cups cooked rice
- 1 tsp mustard seeds
- 1 tsp split black gram
- 1 tsp split chickpeas
- 1 sprig curry leaves
- 3 Tbsp peanuts (roasted)
- 2 green chillies (split length wise)
- ¼ tsp turmeric
- 2 Tbsp oil
- 2 dry red chillies
- salt to taste
- Pinch of asafoetida
Instructions
- Take a deep bottomed pan and add oil.
- Add in mustard seeds, split black gram and split chickpeas, pinch of asafoetida, red chillies and curry leaves. Fry until they sputter.
- Add roasted peanuts and sauté them for a minute.
- Add the raw mango, green chillies, salt and turmeric. Saute until the mango cooks and shrinks.
- Add the cooked rice to the mixture and mix gently. Make sure not to break any grains.
- Raw mango rice is ready.
