Maple and ginger baked chicken with parsnips

Background
For an easy but delicious family meal, tray-baked chicken with vegetables is an excellent solution. This maple and ginger baked chicken with parsnips and carrots is sweet and tangy, loved by adults and kids alike.Β Serve it with a crispy salad.
Ingredients
- 6 chicken thighs and drumsticks
- 4 parsnips
- 1 medium carrot
- 1 onion
- 4 cloves of garlic
- 1 tbps olive oil
- 1 orange
- Salt and pepper
- 1 tsp grated ginger
- 2 Tbsp maple syrup
Instructions
- Preheat the oven to 180°C.
- Peel the carrots and parsnips and cut them into large chunks.
- Cut the onion into 4 wedges.
- Lightly smash the garlic cloves with a tenderiser.
- Zest and juice the orange, mix it with the ginger and olive oil.
- Arrange the cut vegetables and chicken pieces in a large baking tray, scatter the garlic cloves around them. Brush everything with the orange-ginger mixture then season with salt and pepper.
- Cook for 30 minutes until golden, turning the veggies and chicken once.
- Take the tray out, turn the pieces again, then brush them with the maple syrup.
- Bake for another 15-20 minutes until the chicken is crispy and brown.
