Maple glazed Goat’s cheese salad
Background
I love goat’s cheese, particularly the ones with the rind on, as these can make fantastic easy meals or excellent starters at a dinner party. This maple glazed goat’s cheese salad is one of my favourite recipes - it’s ready in just 5 minutes! Served with wholesome bread it’s a lovely lunch - and I’ve served as a starter too at dinner parties. You can use any nuts that’s seasonal or fits in your overall menu – this time I used pistachios, but I’ve made with walnuts and pecan nuts too.
Ingredients
- 1 mini goats cheese log (with rind)
- 1 Tbsp olive oil
- ½ red onion, sliced
- 2 handfuls of mixed baby salad leaves
- 2 Tbsp maple syrup
- 1 Tbsp chopped nuts (walnuts, pistachio etc)
- 1 handful cherry tomatoes, halved
- For the dressing:
- 1 Tbsp maple syrup
- 1 tsp walnut oil
- 1 tsp red wine vinegar
Instructions
- Cut the goat’s cheese into 4 mini logs.
- Heat the oil in a frying pan and gently sauté the onion until soft, then add half of the maple syrup and caramelise. Remove the onion to a plate.
- Meanwhile, scatter the salad leaves onto two plates. Add the tomatoes. Mix the dressing.
- Brush the cheese (the cut sides) with the remaining maple syrup and cook for a minute or so on each side until golden.
- Place 2 pieces of goat’s cheese onto each plate. Arrange the nuts and caramelised onion around them.
- Drizzle with the dressing and serve.
