Maple-roasted chicken legs and sweet potatoes

Background
These maple-roasted chicken legs with sweet potatoes are really yummy. Although it takes an hour to cook this dish, it's done in the oven and the preparation is minimal. So it's perfect for a midweek family meal. Serve it with a green salad.
Ingredients
- 8 chicken legs (mixed drumsticks & thighs)
- 2 large sweet potatoes
- 1 onion
- 2 Tbsp olive oil
- 3 Tbsp maple syrup
- 5 sprigs of thyme
- salt and pepper
Instructions
- Preheat the oven to 190Β°C.
- Place the thighs and drumsticks in a large roasting tin.
- Peel the sweet potatoes and cut into 3-cm chunks.
- Peel the onions and cut into quarters.
- Arrange the vegetables around the chicken legs and add the thyme sprigs. Drizzle everything with oil and maple syrup, then season to taste.
- Roast for about an hour until the sweet potatoes are tender and the chicken is golden brown. During roasting, baste the legs with the juices a couple of times.
- Serve warm.
Tips
