Maple and sesame roast chicken

Background
If you want an interesting yet almost effortless roast dinner or Sunday Lunch, this maple and sesame roast chicken will tick all the boxes. It’s very easy to prepare, it’s yummy and perfect for laid-back dinner and lunches. Serve it with seasonal side dishes.
Ingredients
- 1 medium chicken (about 1.5-2 kg)
- 4 Tbsp red wine vinegar
- 4 Tbsp maple syrup
- 1 Tbsp sesame seeds
- 1 Tbsp ground cinnamon
Instructions
- Preheat the oven to 200°C.
- Pour half of the vinegar into the chicken's cavity. Season with salt and pepper, then bake it for 1 hour and 10 minutes.
- Mix the remaining vinegar, maple syrup, cinnamon and sesame in a small bowl.
- After 70 minutes of baking, remove the chicken from the oven and brush it all over with the glaze.
- Bake for 10 minutes more, then brush again with the remaining glaze and roast for another 10 minutes.
- Check that the chicken is cooked through properly by inserting a skewer in the area where the thigh meets the carcass (if the juice coming out of it is clear, the chicken is cooked through.)
- Rest the chicken for 10 minutes (under cover) before carving and serving.
