Mashed sweet potato with ginger

Background
This mashed sweet potato has a kick to it because it's made with raw ginger. It goes very well with grilled fish, chicken or steak.
Ingredients
- 800g sweet potatoes
- 1 tsp grated fresh ginger
- 2 knobs of butter (or dairy-free margarine)
- 1 Tbsp chopped coriander
Instructions
- Peel & dice the sweet potatoes then cook in boiling water for about 10 minutes or until tender.
- Drain and mash with a potato masher. Stir in the ginger, coriander and butter.
- Season and serve warm.
Tips
You can make it even more zesty by adding 1 teaspoon of de-seeded chopped chilli.© 2024 Copyright CookTogether
