Meatballs in chipotle sweet potato red pepper sauce

Background
These meatballs in chipotle sweet potato red pepper sauce can be quite spicy, depending on the chipotle paste. So if youβre using a really hot one, add less of it or substitute it with tomato puree. I used vegan meatballs, but pork, beef or lamb meatballs are good too. In fact this recipe is ideal for families or get-togethers where some people are vegan, other are meat-eaters - as the meatballs are cooked separately. Serve it with pasta or rice.
Ingredients
- 1 red onion
- 2 cloves of garlic
- 2 sticks of celery
- 2 Tbsp olive oil
- 3 medium sweet potatoes
- 2 medium carrot
- 2 red bell peppers
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 tsp chipotle paste (or tomato purΓ©e)
- 1 bay leaf
- 1 tsp stock powder
- 1 tin chopped tomatoes
- 1 handful coriander leaves
- 1 pack ready-to-cook meatballs (pork, lamb, beef or vegan)
- Salt and pepper
Instructions
- Finely chop the onion and garlic.
- Heat the oil in a large saucepan and gently sautΓ© the chopped vegetables until soft.
- Meanwhile, peel and dice the sweet potatoes and carrots. Chop the red peppers.
- Add these to the pot, stir for another minute then add the spices & chipotle paste and/or tomato purΓ©e.
- Add the tinned tomatoes and enough water to cover the vegetables, then add the stock powder.
- Bring to the boil, cover, turn down the heat and cook for 20 minutes or until the vegetables become tender.
- Turn off the heat. Remove the bay leaf. Add the coriander leaves. Season to taste, then pulse with a stick blender until you get a thick, smooth sauce.
- Meanwhile, grill, pan/fry or bake the meatballs, following the packetβs instruction.
- Also, cook some rice, pasta or noodles, then serve this with the sauce, topped with the meatballs.
- You can use any remaining sauce for other dishes (such as pasta).
