Background
Melon and ginger really complement each other. This soup is absolutely delicious and really refreshing in hot weather! It takes just five minutes to make and, if you use chilled melon, it can be served immediately.
Ingredients
- 1 medium melon
- 100 ml Greek yoghurt
- 3 Tbsp freshly squeezed lemon juice
- 1 tsp grated ginger
- Garnish: chopped mint leaves
Instructions
- Cut the melon in half, scrape out seeds with a spoon, discard.
- Scrape out flesh. Using a blender blitz the melon flesh together with the ginger, yoghurt and lemon juice until creamy and fluffy.
- Chill until serving.
- Serve with chopped mint leaves.
