Mexican chicken skewers

Background
These Mexican chicken skewers are perfect for parties, barbecues and informal get-togethers. If you don't want them to be too spicy, use smoked paprika instead of cayenne. Serve it wrapped in a tortilla or pita with salsa and guacamole!
Ingredients
- 2 large chicken breast fillets
- 3 Tbsp olive oil
- 1 clove garlic, minced
- 1 tsp cayenne pepper
- 1 tsp ground cumin
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- freshly squeezed lime juice
Instructions
- Remove the skin of the chicken then then cut into bite-sized chunks. Put these into a bowl and add the oil and spices. Marinate for about 30 minutes.
- Meanwhile soak 8 wooden skewers in water. Cut the peppers and into bite-sized slices. Peel the onion, cut into 8 wedges.
- Heat your BBQ, grill or griddle pan.
- Thread the chicken, pepper and onion pieces alternating onto the skewers. Brush the onion and pepper with the marinade then season with salt & pepper.
- Cook for 10-15 minutes, turning every couple of minutes. Be careful not to burn them - but they should be slightly charred and the chicken must be cooked through properly!
- Drizzle with lime juice just before serving.
