Mexican style ratatouille with fried eggs

Background
This Mexican style ratatouille with fried eggs is a yummy, healthy dish for breakfast or brunch. You can cook the ratatouille ahead and reheat it, then just add the eggs. Serve it bread or gluten-free scones, low-carb flatbread etc
Ingredients
- 1 red onion
- 1 clove of garlic
- ½ medium courgette
- ½ red bell pepper
- 1 Tbsp olive oil
- 1 cup cherry tomatoes (on the vine, if possible)
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 pinch cayenne
- 4 Tbsp corn kernels
- 1 large handful of curly kale or spinach
- water
- 4 eggs
Instructions
- Thinly slice the onion and garlic.
- Cut the pepper and courgette into small pieces.
- Heat the oil in a pan over medium heat. Add the onion and sauté for 5 minutes, then add the garlic, courgette and pepper.
- Sauté for another 5 minutes, then stir in the spices and add the tomatoes.
- Add a drop of water, season with salt and pepper.
- Put a lid on and gently cook for 10 minutes or so, until the tomatoes have just softened.
- Add the corn and your greens. Cook for another 5 minutes.
- Make four little wells in the ratatouille and carefully crack the eggs into them.
- Put the lid on and cook for 2-5 minutes, depending on how you like your egg. If you like it runny, 2-3 minutes should be enough.
- Serve immediately.
